Key Lime Cupcakes

The winner of the cupcake courier this week is ChristyJan!! She not only told us that she loves Key Lime Cupcakes, but she shared the recipe, too!

Here is the recipe, directly from ChristyJan:

Ingredients
• 2 cups all purpose flour
• 1 1/2 cups sugar
• 1/2 teaspoon salt
• 3/4 cup cold water
• 1/2 cup oil
• 1 1/2 teaspoon vanilla
• 7 large eggs, separated
• 2 teaspoons grated key lime rind
• 1/2 teaspoon cream of tartar


Preheat oven to 350 degrees. Line 2 cupcake pans with paper liners.

Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat 7 egg yolks in a separate bowl, and add to dry ingredients along with the water, oil, vanilla and key lime rind. Mix with mixer at medium speed while scraping bowl until well blended. (approximately 2 1/2 minutes)

In another large mixing bowl, combine egg whites and cream of tartar. Mix at high speed 2 to 2 1/2 minutes or until egg whites are stiff.

Carefully fold flour mixture into egg whites until just blended.

Pour cupcake batter into paper liners until 1/2 to 2/3 full.

Bake for 20 to 25 minutes or until top springs back when touched lightly.

Cool cupcakes completely in pans then drizzle with key lime glaze.

To make key lime glaze combine 1 cup powdered sugar and 1 tablespoon melted butter in a small mixing bowl. Stir in 2 - 3 tablespoons of key lime juice until slightly thin glaze consistency is reached. Drizzle over key lime cupcakes.

Fabulous Tip Friday

Do you ever pull in to the gas station only to discover the gas pump is on the wrong side of the vehicle? Well, we've got a tip to help you out....

Most newer vehicles have a gas pump symbol with an arrow pointing either left or right. This is to let you know what side to fill up you gas on. Very helpful to know if you ever rent or borrow a car.

10 Things You Can Do For The Earth



Mom’s how many of you teach your children about saving our Earth? How many of you think about these issues yourself? We are all part of this world and when each and everyone of us takes steps to make a difference it can change the world! The Mommies here at Mommies United have some great tips and products for you and your children.

1. Turn off the water while your children and you brush your teeth.
2. Plant a tree, or five!
3. Carry your own water bottles.
4. Do conscious laundry. Don’t do it all at once, do your laundry while not in peak hours. This will also save you money.
5. Swap out those old light bulbs with compact florescent bulbs. They save energy and money.
6. Get rid of that pesky junk mail. Pull out the pre-paid stamped envelope in your junk mail, write “please remove” on the envelope and send it back to them – on their dime.
7. Turn off lights and unplug items you are not using.
8. Drive the speed limit. This may take longer but it will also save you in gas. And help reduce emissions.
9. Recycle! Teach your children what it is and what items to look for as recyclables. Make a fun craft project such as decorate bins and teach them to get involved.
10. Buy re-usable bags. And if you are only buying toilet paper and a few items don’t take those grocery bags from the store. It makes a difference.

My Book Fairy OOPSI


We found another creative solution to those little problems, the Oopsi! , responds to the dilemma of children dropping items while being strapped into their car seats. The Oopsi secures bottles, stuffed animals, books and toys to the car seat buckle with a Velcro closure. By pulling on the Oopsi, children are able to retrieve items themselves, without the help of the driver.

ONCE UPON A TIME, on a blustery Nebraska day, Laura Ludwin peeked into her toddler’s room. Cole was asleep, his face pressed against the books stacked in the corner of his crib. How could she keep her son’s favorite books off the mattress, she wondered, yet within easy reach when he woke? Its been a while since I hosted a contest and so here is the new one...This is going to be a bit different then the normal contests I host here for Splat! Like a Silent Auction of sorts!As many of my returning customers and friends know I am training for a 1/2 marathon for The Leukemia & Lymphoma Society's Team In Training.
It has been a wonderful adventure for sure and I am sure it will continue until I pass the finish line on May 18th!In addition to the training I am fund raising for the Leukemia and Lymphoma Society to help find new cures... and I am almost finished with about 70% of my fund raising goal! Donation Site So here is my contest...I will create 3 templates for the person that can help me raise the most money in the next week and a half. The 3 can be seasonal, all different so you can pick and choose different looks whenever you want or you can pass them out to you and 2 other friends.Take one for your self and do a giveaway on your site for the others...Your options are endless! This prize is worth close to if not a little more then $300. What you will get...3 templates including header designs, background designs, sidebar categories and a fun signature.I will give the winner 15credits towards images at istockphoto... which can be split between the 3 sites or used how ever you prefer.The ending date will be 11 days from today which isApril 25thHow do I do this... ??? To enter the CONTEST you must donate a minimum of $5 to my donation site.
