My favourite type of cupcake is a mocha cupcake with mocha icing. I use a recipe that I found in Taste of Home magazine, and I just LOVE these cupcakes. They cupcakes are a hit with everyone who tries them, both kids and adults. I have had to give away the recipe numerous times because they are so wonderful. The entire cupcake is delicious, from the extra-rich cupcake to the fluffy frosting, swirled so pretty, chocolate sprinkles and I add a chocolate covered coffee bean in the center of the swirl just for that final finishing touch. I love to decorate them very pretty, because then they just seem to taste better.

ReplyDeleteMy favorite type of cupcake is a blast from my childhood past. I love cupcake cones. Typically I put white cake into them and making the ice cream part (frosting) white and then top with lots of sprinkles to really make it look like an ice cream cone.
ReplyDeleteI whip up a mean batch of chocolate chunk with chocolate ganache frosting! It is so yummy and absolutely guilt free (in my head at least)! I really could use this carrier so I can bring some in to treat my friends at work as well as the kids at my daughters school!

I've never made this cupcake, or even tasted it, but I'd LOVE to try the Chocolate Graham Cracker with Toasted Marshmallow cupcakes from www.trophycupcakes.com. I saw them on the Martha Stewart show during cupcake week and thought they looked delicious. They are like an ooey gooey smores in a cupcake wrapper1 Graham cracker crust on the bottom, chocolate cake, graham cracker layer on top, topped with real toasted marshmallow. Yum, yum!

I love Key Lime Cupcakes!

Ingredients
• 2 cups all purpose flour
• 1 1/2 cups sugar
• 1/2 teaspoon salt
• 3/4 cup cold water
• 1/2 cup oil
• 1 1/2 teaspoon vanilla
• 7 large eggs, separated
• 2 teaspoons grated key lime rind
• 1/2 teaspoon cream of tartar
Preheat oven to 350 degrees. Line 2 cupcake pans with paper liners.
Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat 7 egg yolks in a separate bowl, and add to dry ingredients along with the water, oil, vanilla and key lime rind. Mix with mixer at medium speed while scraping bowl until well blended. (approximately 2 1/2 minutes)
In another large mixing bowl, combine egg whites and cream of tartar. Mix at high speed 2 to 2 1/2 minutes or until egg whites are stiff.
Carefully fold flour mixture into egg whites until just blended.
Pour cupcake batter into paper liners until 1/2 to 2/3 full.
Bake for 20 to 25 minutes or until top springs back when touched lightly.
Cool cupcakes completely in pans then drizzle with key lime glaze.
To make key lime glaze combine 1 cup powdered sugar and 1 tablespoon melted butter in a small mixing bowl. Stir in 2 - 3 tablespoons of key lime juice until slightly thin glaze consistency is reached. Drizzle over key lime cupcakes.

Confetti cake! My favorite cupcake has to by confetti cake. I know it is mostly known as a kids type of cupcake but I just love them!

It is horrible taking 3 pans with cupcakes in tight rows. These pans make it impossible to get a cupcake without smudging the rest. This would be perfect for me! PLEASE! I must have it!
It is ironic that I found this post tonight because I dreamed about cupcakes last night, craved them ALL DAY long, and then finally broke down and made a batch tonight. It would have been really nice to have a cupcake holder at the time, but they ended up just sitting on different plates all over the kitchen! The cupcakes that I made were made from scratch vanilla cupcakes with chocolate icing, but my absolute favorite cupcakes EVER are chocolate cupcakes with raspberry filling and raspberry icing!

Usually I would go for a chocolate cupcake with a large helping of chocolate frosting on top, but lately I have really been enjoying some of her others like cookies 'n creme, strawberry or her butterscotch....mmmmm! I am craving one just thinking about it!

It is so hard just picking one cupcake to be my favorite, but I guess I would say my dark chocolate cupcake with my mint buttercream on top! Nothing beats chocolate with mint, I could eat the entire two dozen by myself! The double butterscotch comes in at a close second!

Secondly, I liked what I saw when I saw the blue carrier -- and then I saw the PINK one! I'd love to have one of those!
Recently I used some Martha Stewart recipes. The cupcake flavor is irrelevant. The ICING was brilliant. Swiss Meringue Buttercream. Buttery, not to sweet, and it used kosher salt so you'd get a little taste of salt in each bite. Oh man.

ReplyDeleteThe Cosmo cupcake boasts of a vanilla cake with vodka and lime juice soaked cranberries. The buttercream frosting is lime infused with a swirl of pink and white sugar crystals. Garnished with a lime, it is absolutely the best cupcake I've had. It's feminine and delicious!

My favorite cupcake.... it's a strawberry lover's dream. Regular strawberry cake mix, made with sour cream. Add a spoonful of stawberry jam in the middle of each cupcake before baking. Then top with creamy strawberry frosting. DELICIOUS!!!
